Baked Cod with Roasted Red Pepper Sauce

We’ve been falling behind on our posting lately, but not on our cooking. We’ll post the highlights from the last couple of weeks soon, but for now we’ll live in the present and show you what was on the menu tonight. 

Our main course consisted of baked Cod topped with a creamy roasted red pepper sauce served on top of sautéed zucchini noodles. The sauce was adapted from this recipe with the main change being a substitution of cashew milk for the light cream. Tara said this tasted like something from a restaurant!

For dessert we made a classic: chocolate chip cookies.
