Tonight we went vegetarian! For our main course we had baked falafel served with some tzatziki sauce, and on the side a salad with spinach and mixed greens, goat cheese, walnuts, and roasted beets. The falafel had a bit of spice to it thanks to the cayenne pepper and cumin. The creaminess of the goat cheese went perfectly with the beets and walnuts in our salad.
The banana muffins had a good consistency – not too fluffy or dense – and a nice amount of subtle sweetness.
