The first dish we made in our series of cooking adventures was a pumpkin chili with cornbread muffins. The chili had an interesting mix of sweetness and spice, while the muffins were exactly what you would expect and complimented the meal well. Tonight we went vegetarian! For our main course we had baked falafel served with some tzatziki sauce, and on the side a salad with spinach and mixed greens, goat cheese, walnuts, and roasted beets.
